Sausage with chard or spinach

  • 2 bunches of fresh chard or spinach
  • 3 sausages
  • 2 large potatoes
  • Extra virgin olive oil
  • Salt and Pepper To Taste


Clean and wash the chard (or spinach) and cook in a pot with salted water, then drain. Peel and chop the three sausages. Take a pan, put a little oil, the pieces of sausage, salt and pepper and fry over a low heat. Add the two potatoes cut into small cubes and leave to cook, stirring and adding a little water from time to time. Once the potatoes are cooked, add the chard and oil, mix well and sauté over high heat for 3 minutes. Serve hot.
