Sausage Risotto

Ingredients for 4 people

  • 150 g of fresh sausage (about 50-60 g for every 100 g of rice)
  • 350 g of rice
  • 30 g of butter
  • 1 onion
  • 1 stick of celery
  • 1/2 glass of dry white wine
  • 1,5 l of hot broth
  • 1 sprig of parsley
  • little salt
  • abundant grated Parmesan cheese


Peel the sausages and cut them into small pieces.
In a saucepan, fry the chopped onion and celery in a little butter. Add the pieces of sausage and cook for a few minutes, stirring with a wooden spoon. Then add the rice and, continuously stirring, let it flavour and become brilliant. Then sprinkle it with a little dry white wine and, once evaporated, add the hot broth a ladle at a time as it is absorbed. When the rice is cooked, add the chopped parsley and a generous handful of grated Parmesan cheese. Serve the risotto accompanying it with grated Parmesan cheese.
