Prepared with rind, throat, lean and muscle meats and the head of the pig, cotechino (also known as musetto) is a specialty in which the various parts are expertly mixed and flavoured in a balanced way, in order to obtain a traditional Christmas holiday flavour.

In order to fully savour its softness, it is advisable to boil the product for a long time and accompany it with lentils or mashed potatoes.

It is available in a half kilo format and can be vacuum packed on request.
In addition to the traditional cotechino, Brianza also offers zampone, made with the same mixture as the cotechino but enclosed in the skin of the front legs of the pig, and the bondiola, made with the addition of tongue.
